Patata frita

5-6 large potatoes, peeled and thinly sliced
1 large onion, peeled and sliced
4-5 cloves garlic, whole and unpeeled
1 green pepper, seeded and rough chopped
1 large ring chorizo or 1 pound short ribs
1 egg per person
Olive oil
Salt and pepper

Heat plenty of olive oil in a large skillet until hot. Add garlic and potatoes. Cook the potatoes over a fairly high heat until almost done, only turning a few times as needed (too much turning will break the potatoes). If using pork ribs, add them to cook at the same time.

Add the slice onion and chorizo; cook until the potatoes are done and the onion is soft. Beat the eggs together, then pour over the potatoes and turn a few times until the eggs are done. Add salt and pepper to taste.

(If necessary, drain off excess olive oil before serving)
