Conejo frita - fried rabbit with tomato frita

The most popular lunch of the week!
1 fresh rabbit, cut into pieces
3 heads garlic, broken into cloves
4 oz almejas (small clams)
2 onions, minced
2 pints freshly-canned tomatoes
olive oil

Fry the rabbit in oil with the garlic and onion until lightly browned. Add the canned tomatoes, and simmer until the rabbit is tender and the tomatoes are slightly cooked down.

Serve with fresh crusty bread.
